1. Preheat the oven and grease a tray with coconut oil. |
2. In a medium sized bowl, Mix the dry ingredients (flour, baking soda, cinnamon, Nutmeg , and ginger). |
3. In another mixing bowl, Whisk the eggs, coconut oil, vanilla extract, maple syrup, Greek yogurt, and almond milk together. |
4. Gradually add the liquid ingredients to the dry and mix until combined. |
5. Add carrots and raisins. |
6. To the oven for 25-35 minutes at 180°C. |
7. Leave to cool completely before decorating. |
8. Mix Greek yogurt with maple syrup and vanilla extract. |
9. Spread it over the cake or decorate the cake with it. |
