Ingredients

  • 1 and a half cups of whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ¼ cup melted coconut oil
  • 2 eggs
  • A teaspoon of vanilla
  • 3 tablespoons maple syrup (or honey)
  • ½ cup of plain Greek yogurt
  • ⅓ cup of unsweetened almond milk
  • 2 cups grated carrots (3 medium carrots)
  • 1/2 cup raisins

To prepare the cream

  • 1 and a half cups of plain Greek yogurt
  • 2 tablespoons of maple syrup

Method

1. Preheat the oven and grease a tray with coconut oil.
2. In a medium sized bowl, Mix the dry ingredients (flour, baking soda, cinnamon, Nutmeg , and ginger).
3. In another mixing bowl, Whisk the eggs, coconut oil, vanilla extract, maple syrup, Greek yogurt, and almond milk together.
4. Gradually add the liquid ingredients to the dry and mix until combined.
5. Add carrots and raisins.
6. To the oven for 25-35 minutes at 180°C.
7. Leave to cool completely before decorating.
8. Mix Greek yogurt with maple syrup and vanilla extract.
9. Spread it over the cake or decorate the cake with it.
